Kachumber Salad

Serves 4 | 200 calories | 5-10 mins

 

Ingredients

1 Tomato

20 Coriander leaves

Juice of 1/2 lime

1/2 cucumber

1 small red onion

A generous pinch of salt

(For some extra spice add in half a teaspoon of chaat masala)

 

Preparation

1.  Peel and finely slice the red onion, place into bowl with water and set aside.
2.  Cut cucumber in half lengthways, then quarter the cucumber lengthways. Finally cut the cucumbers into small chunks.
3.  Wash and pick the coriander leaves and set aside with the cucumbers. Cut the tomato into small chunks. Drain the onions and pat dry. Combine all the cut ingredients into a bowl and add the remaining lime juice and salt. Mix the ingredients together and serve. (Add some chaat masala for a spicy kick)
